| Based on the ingredients grown on-site in our design, we drafted a short sample cafe menu based on the current menu in the Kallari Cafe in Quito. This menu gives visitors the chance to sample local dishes, an important part of any introduction to Kichwa culture. In addition to environmental benefits, having a significant amount of food generated on-site will lower costs and inputs to Kallari while creating new products for them to market - all while continuing local culinary traditions. |
