| How can you design a chocolate factory if you've never been inside one? To help inform our design decisions we visited chocolate factories of all sizes, from San Francisco to New York. During our travels we studied energy use, ventilation, noise control, climate requirements, and, of course, chocolate-making. We put this knowledge into practice, resulting in a design that allows Kallari to produce chocolate as efficiently and sustainably as possible. |
